Reasonably Healthy Banana Brea

[Insert profound-but-meandering story that somehow ties back to banana bread]

Ingredients:

  • 4 medium bananas

  • 1/2 cup applesauce or coconut oil

  • 1/2 cup plain greek yogurt 

  • 2 eggs

  • 1 tsp vanilla extract

  • 1/2 cup sugar

  • 1 3/4 cup whole wheat flour

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1/4 tsp salt

  • Mix-in options: hazelnuts, walnut, chocolate chips…

Instructions:

  • Preheat oven to 325 degrees

  • Grease a 9x5 inch pan

  • Mash bananas, add wet ingredients

  • Add the sugar

  • Add the rest of the dry ingredients

  • Add in the mix-ins

  • Pour in the pan and bake at 325 for 45 mins or until done (check with a knife at 45 mins)
