The person who invented avocado toast should be given a gold medal. The concept is simple and genius - crispy toast, a buttery, mashed avocado spread on top, a little sea salt and pepper, and a fried egg if you want to kick it up a notch. It's a satiating and nutritious breakfast, without being too much in the morning (still can't do those giant veggie scrambles).
I used to avoid bread completely because of digestion issues that I pegged on gluten intolerance.
