Saturdays are for productivity, fun, and adventure, but Sundays are for decadence and relaxation. Sleeping in, a slow transition out of bed, and finally a breakfast of French toast (made with Ezekiel sprouted bread and free range eggs) and coffee with chocolate cashew milk. I love how simple French toast is to make, but still a special breakfast.
Healthy French toast for a two-person serving (note that we eat a lot):
Four pieces of Ezekiel sprouted bread
Four free range eggs
1/2 cup of cashew milk or milk of choice
A dash of cinnamon and nutmeg
Toppings: honey, blueberries, and cottage cheese (I like the warm and cold contrast)
Mix the eggs, milk, and spices in a large bowl. Soak the bread in the mixture, flipping to cover each side. Heat a pan on the stove with butter, and transfer the soaked bread into the pan. Cook bread on each side until golden brown.
It might not be the prettiest, but it's easy, healthy, and delicious! Also, based on my last three food posts, it is apparent that I need to either 1) open up a restaurant centered around toast, or 2) become a spokesperson for Ezekiel bread
