I'm really into winter vegetables. Especially the root variety. Beets, carrots, yams, parsnips...they are all delicious. I love that you can buy them locally (and cheaply) at Fairway. I love even more how easy they are to cook. I chop them up, put them in a baking pan, and cover them with olive oil, sea salt, ground pepper, and other spices. Cumin and nutmeg are some of my favorites to use. Then I bake them at 400 for about 45 minutes, or whenever they get soft. I probably will need to come up with some more creative ways to cook them soon, but for now I'll stick with this method because it's tasty and I'm lazy in the kitchen.
